despite the shit weather that makes me not want to go outside, i have been surprisingly productive... vacuumed half the apartment, cleaned most of one bathroom, and made an awesome quinoa salmon red pepper aioli casserole thingy for lunch!

and my latest adventures in vegan cooking... mostly adaptations of recipes from vegan planet...
veggie chili with polenta goop (which was supposed to be polenta biscuits):

tofu and veggie scramble/omlet, which was super tasty and much better than i'd expected:

and the masterpiece lime cheesecake with ginger crust, which was a bit of a fiasco to make (there was smoke, i accidentally left it in the freezer over night...), but was quite good in the end!

it's been a pretty good afternoon. went and got my vote on, went and got some groceries, and then came home and had lunch...lentil soup.
voting: you know, i agree it's been a pretty boring election, but i still really like voting. it's kinda fun. and i also really like watching as all the results roll in... the suspense is wicked!
groceries: well, i needed them, so that worked out well. soup stock, tofu, peppers, spices, rice bread, soy ice cream, cornmeal, chips, beans, artichoke hearts... can you tell i've been going fairly veg these days? i recently got the "vegan planet" cookbook, which i loooove. i've made a bunch of stuff from it, and the recipes seem to turn out really well!
lentil soup: i don't think i've had lentils since i was a kid, cause when i was a kid, they were one of the few foods i really hated. the lentil soup tasted a lot like i remember pea soup tasting. not that great, not totally horrible. will i buy it again? i think not.

but apparently i have reached a state of happiness, slightly leaning towards paranoia and narcissism. hey, not too bad...
